Jicama Hash Browns

  • 2 cups of jicama, peeled and grated
  • 1/2 onion, chopped
  • 1 clove garlic crushed
  • 1 tsp sweet paprika (optional hot)
  • 2 tsp oil
  • salt (optional) and pepper, to taste

In a large skillet, heat the oil over medium high heat. Add the onion and garlic and cook until translucent. Add the paprika, stir 30 sec, add the jicama, salt (optional) and pepper and cook until brown. Top with your favorite egg dish and breakfast is served!
