Frying Pan Tuna Pizza

Costco sells a great flatbread or you can purchase whole wheat tortillas, which come in handy for quick meals that fit our goal of adequate protein/carb and low fat. Here is a basic recipe that you can modify with different protein sources. You can have a huge variety of pizzas by simply changing the ingredients. Use shrimp, salmon, chicken, ground beef etc.

Ingredients

  • One whole-wheat tortilla
  • ¼ cup low-fat pizza sauce
  • 1 portion tuna flaked
  • ¼ red bell pepper, sliced
  • ¼ yellow bell pepper, sliced
  • Four thin slices of tomato
  • ¼ cup reduced-fat mozarella shredded

Preparation

  1. Preheat large frying pan
  2. Spoon pizza sauce evenly over the tortilla
  3. Top with tuna, bell peppers, mozzarella cheese and tomatoes
  4. Place the tortilla in the frying pan and cover
  5. Wait for about 3 minutes or until the cheese is melted
  6. Slice, serve and enjoy!
